Ham and Spinach Focaccia Sandwiches

Ingredients

  • 1 (8-inch) round focaccia bread (about 8 ounces)
  • 2 tablespoons chopped fresh basil
  • 1 cup spinach leaves
  • ¼ teaspoon crushed red pepper
  • 8 ounces smoked deli ham, thinly sliced
  • 3 tablespoons low-fat mayonnaise
  • 1 (7-ounce) bottle roasted red bell peppers, drained and sliced
  • + 1 more ingredients
    • 2 teaspoons sun-dried tomato sprinkles

Combine the first 4 ingredients in a small bowl. Cut bread in half horizontally. Spread the mayonnaise mixture over the cut sides of bread. Place ham over bottom half of bread. Top with peppers and spinach, and cover with top half of bread. Cut the sandwich crosswise into 4 wedges.
