Ingredients

  • 1/3 cup granulated sugar
  • 1 Tbs. baking powder
  • 1-½ tsp. pure vanilla extract
  • Vegetable oil or nonstick cooking spray for the waffle iron
  • ½ cup vegetable oil
  • 9 oz. (2 cups) unbleached all-purpose flour
  • 2-¾ oz. (2/3 cup) cake flour
  • + 6 more ingredients
    • ½ tsp. baking soda
    • ¾ tsp. table salt
    • Berry Compote, Crème Fraîche Whipped Cream, warm maple syrup, and butter for serving
    • 3 oz. (2/3 cup) hazelnuts, toasted and skinned
    • 2-¾ cups buttermilk
    • 4 large eggs

With a rotary grater, finely grind the hazelnuts. (Or process them with 2 Tbs. of the flour in a food processor until finely ground.)
