Healthy Chili

Ingredients

  • ¼ cup raisins
  • 3 dried apricot halves
  • 1 cinnamon stick
  • 1 ¼ teaspoons salt
  • 3 tablespoons chili powder
  • 3 tablespoons chili flakes
  • 12 ounces corn
  • + 9 more ingredients
    • 10 ounces kidney beans
    • 14 ounces tomato sauce
    • 28 ounces stewed tomatoes
    • 3 garlic cloves
    • 1/3 onion
    • 2 celery ribs
    • 4 chopped baby carrots
    • 3 king oyster mushrooms
    • 1 chopped red bell pepper

1 To pot add onion, pepper, mushrooms, carrots, celery, and garlic; cook till tender. 2 Add stewed tomatoes, tomato sauce, beans, corn, chili flakes and powder, salt, pepper, cinnamon, apricots and raisins. 3 Break up the stewed tomatoes while it's cooking so there are chunks. 4 Bring to boil....
