Ingredients

  • 1 tablespoon cornmeal
  • 1 ½ cups bread flour, divided
  • Cooking spray
  • ½ cup hot strong brewed coffee (100° to 110°)
  • 1 cup whole wheat flour
  • ¼ cup toasted wheat germ
  • 1 1/8 teaspoons salt
  • + 2 more ingredients
    • ½ cup hot Guinness Stout (100° to 110°)
    • 1 package dry yeast (about 2 1/4 teaspoons)

Combine coffee and stout in a large bowl. Dissolve yeast in coffee mixture; let stand 5 minutes. Lightly spoon whole wheat flour into a dry measuring cup; level with a knife.
