Herb-and-Endive Salad with Creamy Lime Dressing
Ingredients
- 0.5 cup(s) small mint leaves
- Chive or sage blossoms
- 2 Belgian endives
- 0.25 cup(s) tarragon leaves
- 1 cup(s) packed 1-inch chive pieces
- 1 cup(s) packed small basil leaves
- 2 cup(s) packed flat-leaf parsley

- 1 teaspoon(s) finely grated lime zest
- 0.25 cup(s) plus 1 tablespoon mayonnaise
- 1 tablespoon(s) fresh lime juice
In a small bowl, combine the mayonnaise with the lime juice and zest; season with salt and pepper. In a large bowl, mix the herbs with the endives. Add the dressing, toss and garnish with the chive blossoms; serve.
