Herb-Crusted Flank Steak with Cherry Tomatoes and Olives

Ingredients

  • 2 tablespoons fresh rosemary
  • 2 tablespoons Sherry wine vinegar
  • ¼ cup pitted brine-cured green olives
  • ¼ cup Kalamata olives or other brine-cured black olives
  • ¼ cup fresh basil
  • 1 tablespoon fresh tarragon
  • 2 tablespoons fresh thyme
  • + 8 more ingredients
    • 2 cups cherry tomatoes
    • 2 garlic cloves
    • 1 tablespoon olive oil
    • 1 cup fresh Italian parsley
    • ¼ cup extra-virgin olive oil
    • 2 teaspoons salt
    • 2 1 1/2-pound flank steaks
    • 1 ½ teaspoons ground black pepper

Mix first 6 ingredients in small bowl. Place steaks in large glass baking dish. Brush steaks with olive oil. Rub with herb mixture.
