Ingredients

  • 3 large red beets
  • 12 garlic cloves
  • 2 acorn squash
  • 1 large rutabaga
  • 2 large parsnips
  • 2 tablespoons fresh summer savory
  • 2 medium turnips

    • Nonstick vegetable oil spray
    • ¼ cup olive oil
    • 8 large shallots
