Herbed Sweet Potatoes with Feta


  • Juice of 1 lemon
  • 1 Tbs. finely chopped fresh thyme
  • 1/3 cup pine nuts
  • ¼ lb. feta cheese, crumbled
  • Salt and freshly ground pepper, to taste
  • 3 Tbs. olive oil
  • 4 large sweet potatoes, peeled and cut into slices ½ inch thick
