Hermitage Chess Pie


  • 1 cup milk
  • 2 tablespoons cornmeal
  • 1 unbaked (9-inch) pastry shell
  • 2 cups sugar
  • ½ cup butter or margarine, softened
  • 5 egg yolks
  • 2 tablespoons all-purpose flour

Combine first 3 ingredients; mix well. Set aside. Cream butter in a medium mixing bowl; add sugar mixture, beating well. Add milk and yolks. Pour into pastry shell. Bake at 425° for 15 minutes. Reduce heat to 375°, and continue baking 45 minutes. Cool before slicing.
