HOKKAIDO MILK BREAD RECIPE (USING TANGZHONG)

Ingredients

  • 1/3 cup of all-purpose flour (maida)
  • For Dough
  • 2.5 cups of all-purpose flour (maida)
  • 3 tbsp of sugar (see notes)
  • 1 tsp of salt
  • 2 tsp of instant or active-dry yeast (I use and recommend Fleischmann's)
  • 2 tbsp of milk powder
  • + 7 more ingredients
    • 1/8 cup of cream (or milk)
    • ½ cup of milk
    • ½ cup of water
    • ½ cup of milk
    • 1/3 cup of tangzhong (half of above cooked quantity)
    • 25 gm of unsalted butter, at room temperature
    • 1 cup of chocolate chips (if making chocolate rolls)
