Home Fries with Wild Mushrooms
- 6 ounces fresh shiitake mushrooms
- 3 pounds medium-size white or Yukon Gold potatoes
- 1 tablespoon extra-virgin olive oil
- ¼ cup fresh parsley
- 4 tablespoons butter
- 6 ounces fresh oyster mushrooms
