Honey Dijon Kettle Crusted Flounder

Ingredients

  • 1 tbsp olive oil
  • ½ cup Honey Dijon Kettle chips, ground
  • ½ cup panko breadcrumbs
  • 1 tsp pepper
  • 1 tsp oregano
  • 2 flounder filets (or other white fish – tilapia, halibut, etc.)

Preheat oven to 400 degrees Rinse and pat dry your flounder with cold water Combine dry ingredients together and put onto a shallow dish Apply olive oil to the fish Next put the fish into the panko and chip coating covering both sides of the fish Put onto a cookie sheet over a pan and place in oven for approximately 20 minutes remove when you see a nice golden color, watch carefully for any burning to the crust Serve over or alongside your favorite salad
