Ingredients

  • ½ cup unsalted butter
  • 1 ½ cups all purpose flour
  • ¼ teaspoon salt
  • ¼ cup sugar
  • 6 ripe medium peaches
  • 2 tablespoons honey
  • 3 ½ tablespoons water

    • 2 tablespoons sugar
    • 3 tablespoons all purpose flour
    • 3 tablespoons powdered sugar
    • 1 cup whipping cream
    • 2 teaspoons grated lemon peel
    • 2 tablespoons sliced almonds
    • ¼ teaspoon vanilla extract
    • 6 tablespoons mascarpone cheese
    • 2 tablespoons unsalted butter
    • 2 tablespoons peach preserves

Blend flour, sugar, and salt in processor. Using on/off turns, cut in butter until pea-size pieces form. With machine running, add enough ice water by tablespoonfuls to form moist clumps.
