  • 2 Tbs. fresh lemon juice
  • 1 medium head cauliflower (1-¼ lb.), cored and cut into 1-inch florets (about 7 cups)
  • ¼ cup extra-virgin olive oil
  • 2 Tbs. honey
  • ½ tsp. finely grated lemon zest
  • 1 medium red onion, finely diced
  • Kosher salt

    • 1 Tbs. chopped fresh cilantro
    • 1 tsp. ground coriander
    • ½ tsp. sweet smoked paprika
    • ¼ tsp. crushed red pepper flakes
