Honey-Roasted Sweet Potatoes

Ingredients

• 2 pounds sweet potatoes or yams, peeled and cut into 3/4-inch chunks
• 1 clove garlic, sliced
• ¼ cup PLUS 2 tablespoons Shedd's Spread Country Crock Spread, melted
• ¹/₈ teaspoon salt
• ¹/₈ teaspoon ground cayenne pepper
• 2 tablespoons honey
