Hot-and-Sour Peanutty Noodles with Bok Choy

Ingredients

  • 1 tablespoon dark sesame oil
  • 1 tablespoon rice vinegar
  • 8 ounces whole-wheat spaghetti
  • 2 ¼ teaspoons kosher salt
  • 1 large shallot
  • ¾ cup low-sodium vegetable stock
  • 2 tablespoons low-sodium soy sauce
  • + 6 more ingredients
    • 1 piece ginger
    • 1 pound baby bok choy
    • 1 red bell pepper
    • ½ cup chopped unsalted roasted peanuts
    • 1 tablespoon canola oil
    • ¼ teaspoon red pepper flakes
