Individual Lime Tarts

Ingredients

  • 6 tablespoons reduced-fat frozen whipped topping, thawed, optional
  • Cooking spray
  • 2 large egg yolks, lightly beaten
  • 1/3 cup fresh lime or key lime juice
  • 3 tablespoons sugar
  • 1 egg white, lightly beaten
  • 2/3 cup sugar

    • 3 tablespoons butter or stick margarine, melted
    • Lime slices, optional
    • 1 ½ cups cold water
    • ¼ cup cornstarch
    • 1 ½ cups graham cracker crumbs
    • 1 teaspoon vanilla extract
    • 2 teaspoons grated lime or key lime rind
