  • 1/3 cup granulated sugar
  • ¼ tsp. table salt
  • 2 Tbs. unsalted butter, cut into 4 pieces, at room temperature
  • 4 large egg yolks
  • ½ vanilla bean, split, or ¾ tsp. pure vanilla extract
  • 1¾ cups whole milk
  • 5 tsp. cornstarch

In a medium saucepan, whisk the sugar, cornstarch, and salt until well blended. Slowly pour in the milk, whisking constantly. Add the vanilla bean, if using.
