Ingredients

  • Fleur de sel*
  • 1 large egg
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1/3 cup plus 1/4 cup grated Parmesan cheese
  • 4 tablespoons (or more) water
  • ½ teaspoon freshly ground black pepper

    • 5 2/3 cups zucchini
    • 2 teaspoons fresh lemon juice
    • ¾ cup (1 1/2 sticks) unsalted butter
    • 4 tablespoons butter
    • 2 teaspoons finely grated lemon peel
    • 1 ¼ teaspoons salt
    • 1 small clove garlic
    • 4 teaspoons extra-virgin olive oil
    • 1 cup onion
    • 1 ¼ cups ricotta cheese

Whisk flour and salt in medium bowl. Using fingertips, rub butter into flour mixture until coarse meal forms.
