Ingredients

  • 2 pounds Irish boiling bacon (such as Tommy Moloney's)
  • 1/8 teaspoon salt
  • 1 small onion, finely chopped
  • 2 teaspoons whole-grain Dijon mustard
  • 1 garlic clove, minced
  • 1 ¼ cups 2% reduced-fat milk
  • 12 ounces small red potatoes
  • + 6 more ingredients
    • 14 cups water, divided
    • ¼ teaspoon freshly ground black pepper
    • 2/3 cup dry white wine
    • 1 (3-pound) cabbage, trimmed, cored, and quartered
    • 4 medium carrots, cut into 1-inch pieces
    • 2 tablespoons unsalted butter
