Italian Bread Salad (Panzanella)

Ingredients

• 6cups French bread
• ½cup extra-virgin olive oil
• Salt and pepper
• 1 ½pounds tomatoes
• 3tablespoons red wine vinegar
• 1 cucumber
• 1 shallot
