Italian Meatloaf

Ingredients

  • 1 cup Mozzarella cheese
  • 2 eggs
  • 1 cup Parmesan cheese
  • 1 teaspoon basil
  • 1 tablespoon Italian seasoning
  • 1 cup oat meal
  • 1 can (14 ounces) Italian style diced tomatoes
  • + 3 more ingredients
    • 1 bell pepper; chopped
    • 1 onion; chopped
    • 1 bottle prego spaghetti sauce (reserve 1 cup for topping)

In a large bowl, mix all the ingredients, except Mozzarella cheese, Reserving 1 cup for topping. Transfer to baking pan, and shape into loaf. Spread sauce on top. Place in oven and bake for 1 hour at 350 F. Sprinkle with the Mozzarella cheese and bake until melted. Let stand 5 minutes bef...
