Jasmine Rice with Green Onions, Peas, and Lemon

Ingredients

  • 2 tablespoons fresh lemon juice
  • 1 ¾ cups water
  • 6 green onions
  • 1 ¼ cups jasmine rice or long-grain white rice
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon grated lemon peel
  • 2 tablespoons fresh parsley
  • + 2 more ingredients
    • ½ teaspoon salt
    • ½ cup fresh or frozen peas

Combine 1 3/4 cups water, rice, and salt in large saucepan. Bring to boil over high heat. Reduce heat to low; cover and cook until rice is tender, about 15 minutes. Remove from heat.
