  • ¼ cup chopped fresh cilantro
  • 1 cucumber (about 1/2 pound), peeled, halved lengthwise, seeded, and thinly sliced
  • 2 cups (1/2-inch) julienne-cut peeled jicama
  • ½ cup vertically sliced red onion
  • ½ teaspoon salt
  • ½ teaspoon hot chili powder
  • 4 oranges
  • + 3 more ingredients
    • 2 tablespoons chopped fresh mint
    • 2 cups cubed peeled cantaloupe
    • ¼ cup fresh lime juice

Peel and section oranges over a bowl; squeeze membranes to extract juice. Set sections aside; reserve 1/4 cup orange juice.
