  • ¼ pound shallots
  • ¾ cup water
  • 1 sugar
  • 3 tablespoons extra-virgin olive oil
  • ¼ cup red-wine vinegar
  • 2 pounds kale

Bring vinegar, oil, sugar, and 1/4 teaspoon salt to a simmer in a small saucepan. Stir in shallots and remove from heat.
