Katie’s Pimento Goat Cheese

  • whole(s) radishes and celery ribs
  • 1 teaspoon(s) onion powder
  • 1 tablespoon(s) sweet pickle relish from a jar
  • 0.5 cup(s) mayonnaise
  • 4 ounce(s) smoked cheddar cheese
  • Salt and freshly ground pepper
  • 1 11-ounce log of fresh goat cheese
  • + 3 more ingredients
    • 2 scallions
    • 1 teaspoon(s) Tabasco
    • 0.25 cup(s) drained jarred pimientos

In a medium bowl, using a wooden spoon, blend the goat cheese with the cheddar, mayonnaise, pimientos, scallions, pickle relish, onion powder and Tabasco and season with salt and pepper. Transfer the pimento cheese to a bowl and serve with radishes and celery ribs.
