'Key' Lime Pie

Ingredients

  • ½ tsp. table salt
  • 1 lime, zested into thin strips
  • 3 oz. (6 Tbs.) chilled unsalted butter, cubed
  • 2 tsp. granulated sugar
  • 2 large egg yolks
  • 2 tsp. finely grated lime zest (from about 2 regular limes)
  • 2 14-oz. cans sweetened condensed milk
  • + 5 more ingredients
    • 1 cup fresh lime juice (from about 4 regular limes)
    • 2-½ to 3 Tbs. ice water
    • 2 Tbs. chilled vegetable shortening, cubed
    • 1 cup heavy cream
    • 6-¾ oz. (1-½ cups) all-purpose flour
