Kim's Moist Muffins

Ingredients

  • 1 teaspoon vanilla extract
  • 1 egg, lightly beaten
  • ½-¾ cup caster sugar
  • ¾ cup buttermilk or regular milk
  • ¼-½ cup vegetable oil
  • 220 g self-raising flour, sifted
