Kumara Salad

Ingredients

  • 1 tablespoon lemon juice
  • 2 tablespoons chives (chopped)
  • ½ cup parsley (flat leaf coarsely chopped)
  • 1 ½ tablespoons vegetable oil (or olive oil)
  • 700 g kumara (sweet potato cut into 3 cm pieces)

1 Preheat oven to 220C (200C fan forced). 2 Line a baking tray with baking paper and place kumara on prepared tray and drizzle with half the oil and bake for 20 minutes or until tender. 3 Combine kumara with remaining ingredients in a medium bowl.
