Kumquat-Cardamom Tea Bread
Ingredients
- 2 cups kumquats
- 2 kumquats
- Nonstick vegetable oil spray
- 3 cups all purpose flour
- 2 teaspoons instant tea powder
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda

- ¼ cup unsalted butter
- 3 cups powdered sugar
- 1 tablespoon fresh lemon juice
- 2 teaspoons kosher salt
- 1 ¼ cups sugar
- 13 tablespoons corn oil
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 8-ounce can crushed pineapple in its own juice
- 1 cup walnuts
Place quartered kumquats in processor; puree 3 minutes. Measure 1/3 cup puree for glaze; set aside. Position rack in center of oven; preheat to 350°F.
