Lacy Corn Cakes


  • 1 1/3 cup(s) yellow corn meal
  • 1 teaspoon(s) Salt
  • 2 Eggs
  • 2 cup(s) milk
  • 4 tablespoon(s) melted shortening

Combine corn meal and salt. Combine eggs, milk, and melted shortening; pour into corn meal and stir until well combined. Bake on a hot griddle, stirring batter each time before removing a spoonful. Serve hot with butter and syrup or honey. Makes 8 servings (about 40 thin cakes)
