Lamb and Sausage Pie

  • 1 pound trimmed lean leg of lamb or 2 pounds lamb shoulder chops, boned, fat trimmed
  • 3 tablespoons orange juice
  • 1 large egg
  • ½ cup dry white wine
  • 2 ½ cups all purpose flour
  • 6 tablespoons solid vegetable shortening
  • 2 tablespoons olive oil
  • + 7 more ingredients
    • ½ teaspoon salt
    • 2 garlic cloves
    • ¼ teaspoon saffron threads
    • 2 medium-size sweet onions (such as Vidalia or Maui)
    • 4 tablespoons water
    • 3 tablespoons olive oil
    • 4 ounces sobrasada or sweet Spanish chorizo

Blend flour and salt in processor. Add shortening; using on/off turns, cut in shortening until mixture resembles coarse meal.
