Ingredients

  • 1 onion, cut into thin slices
  • 1 ½ cups long-grain rice, preferably basmati
  • 1 ¾ teaspoons salt
  • 1 pound boneless lamb, cut into 1/2-inch cubes
  • ½ teaspoon ground cumin
  • 1/3 cup raisins
  • 2 cloves garlic, minced

    • 1/3 cup chopped cashews
    • 1/8 teaspoon cayenne
    • ¼ teaspoon turmeric
    • 2 ¾ cups water
    • ¼ teaspoon fresh-ground black pepper
    • ½ cup plain yogurt
    • 3 tablespoons butter
    • ¼ teaspoon ground cardamom or ground coriander
    • 1 cinnamon stick, broken in half
    • 5 cloves
