Lamb Burgers with Red-and Green-Tomato Chutney

  • 2 tablespoons maple syrup
  • 1 ½ pounds lean ground lamb
  • 1 small green (unripe) tomato
  • ¼ teaspoon red pepper flakes
  • 1 plum tomato
  • ½ teaspoon ground cumin
  • 1 tablespoon fresh ginger
  • + 3 more ingredients
    • 1 large garlic clove
    • ¼ cup cider vinegar
    • 2 tablespoons fresh cilantro

Prepare grill for cooking. Boil vinegar, syrup, garlic, ginger, cumin, and red pepper flakes in a small saucepan until thickened and reduced to about 2 tablespoons, 2 to 3 minutes (watch carefully).
