Lamb Chops with Herbed Yogurt over Couscous

Ingredients

  • 1 cup water
  • ¾ cup uncooked couscous
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, divided
  • 8 (4-ounce) lamb loin chops, trimmed
  • 1 tablespoon chopped fresh mint
  • 1/3 cup plain fat-free yogurt
  • + 4 more ingredients
    • Cooking spray
    • 1 tablespoon chopped fresh basil
    • 1 tablespoon chopped fresh parsley
    • 1 teaspoon honey

Preheat broiler.Bring 1 cup of water to a boil in a medium saucepan; gradually stir in couscous. Remove from heat; cover and let stand 5 minutes.
