Lavender-Chocolate Chunk Pancakes with Crème Frâiche

Ingredients

  • 4 ounces high quality dark chocolate or chocolate chips
  • 1 ½ cup all-purpose flour
  • 3 tablespoons sugar
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ tablespoon sea salt
  • 1 to 1 ½ teaspoon dried lavender (to taste)

    • ½ cup crème fraiche
    • 1 cup whole milk
    • ¾ teaspoons lemon zest (optional)
    • 1 tablespoon vanilla extract
    • 2 large eggs
    • 2-4 tablespoons unsalted butter
    • Good quality maple syrup (optional)

Cut the dark chocolate into small to medium size chunks (about the size you might find in ice cream) and set aside.
