Leek and Garlic Soup

Ingredients

  • 4 thyme sprigs
  • 1 whole garlic head
  • ¼ cup finely chopped fresh chives
  • 2 (4-inch) green leek leaves
  • 6 parsley sprigs
  • 2 cups (1-inch) cubed crusty bread (about 2 ounces)
  • 1 bay leaf
  • + 5 more ingredients
    • 3 cups thinly sliced leek (about 3 large)
    • 1 tablespoon chopped fresh garlic
    • 4 cups organic vegetable broth (such as Swanson Certified Organic)
    • 1 tablespoon olive oil
    • ¼ teaspoon coarsely ground black pepper

1. Preheat oven to 350°.

2. Remove white papery skin from garlic head (do not peel or separate the cloves). Wrap head in foil. Bake at 350° for 45 minutes; cool 10 minutes. Separate cloves; squeeze to extract garlic pulp. Discard skins.
