Ingredients

  • Biga (recipe follows), at room temperature
  • ¾ cup whole-wheat flour
  • ¾ cup chopped walnuts (about 4 oz.)
  • About 5 cups bread flour
  • 1 ½ cups (about 6 oz.) chopped leeks (white and pale green parts only)
  • 3 ½ teaspoons salt
  • ¾ teaspoon active dry yeast
  • + 2 more ingredients
    • About ¼ cup cornmeal
    • 2 tablespoons chopped fresh oregano leaves

1. In the bowl of a standing mixer or another large bowl, sprinkle yeast over 1 cup warm (100° to 110°) water; let stand until foamy, about 10 minutes. 2.
