Leeks Vinaigrette with Red Bell Pepper and Mint

  • 3 tablespoons olive oil
  • 1 medium red bell pepper
  • 1/3 cup coarsely chopped walnuts
  • 4 teaspoons red wine vinegar
  • 2 teaspoons Dijon mustard
  • ½ cup crumbled feta cheese
