LEFT OVER MAGIC CORN

Ingredients

  • ½ cup(s) Milk
  • 1 egg (large)
  • 1 ½ cup(s) corn
  • 1 pouch (6.5 ounce cornbread mix

Mix all ingredients and let stand 5 minutes. Heat vegetable oil in a pan and drop heaping Tbsp of batter into hot oil; cook 1 to 1 1/2 minutes on each side. flatten with spatula after turning. Serve warm or at room temperature with a drizzle of honey or maple syrup.
