Lemon and Toasted-Coconut Meringue Pie

Ingredients

  • ¾ cup fresh lemon juice
  • ¾ cup unsalted butter
  • 1 cup sugar
  • 3 tablespoons water
  • 12 tablespoons unsalted butter
  • 4 large eggs
  • 1 salt

    • 2 tablespoons cornstarch
    • ½ cup sweetened flaked coconut
    • 1 cup sweetened flaked coconut
    • ¼ teaspoon cream of tartar
    • ¼ teaspoon salt
    • 6 large egg whites
    • 1 large egg yolk
    • 6 large egg yolks
    • 1 1/3 cups powdered sugar
    • 1 ½ cups all purpose flour

Blend flour, coconut, and salt in processor. Add butter and cut in, using on/off turns, until mixture resembles coarse meal. Whisk egg yolk and 2 tablespoons ice water in small bowl to blend.
