Ingredients

  • 1 cup 1% low-fat cottage cheese
  • 1 egg white
  • Vegetable cooking spray
  • ¼ teaspoon ground mace or nutmeg
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • + 11 more ingredients
    • ¼ cup firmly packed dark brown sugar
    • 1 tablespoon lemon zest
    • LEMON FILLING
    • GARNISH
    • 3 ½ tablespoons fresh lemon juice
    • BUTTER CRUST
    • 1 large egg
    • 1/3 cup butter, softened
    • Lemon rind curl
    • ¼ teaspoon baking powder
    • 2 tablespoons all-purpose flour

1. Preheat oven to 350°. Prepare Crust: Beat first 4 ingredients at medium speed with an electric mixer until smooth. Add 1 cup flour, beating at low speed until well blended.
