Lemon Cream Meringue

Ingredients

  • ½ teaspoon cream of tartar
  • 4 eggs, separated
  • 1 ½ cups sugar, divided
  • 1 ½ cups whipping cream, divided
  • 1 tablespoon sugar
  • 2 tablespoons grated lemon rind
  • 3 tablespoons lemon juice

Beat egg whites (at room temperature) and cream of tartar in a medium mixing bowl until foamy. Gradually add 1 cup sugar, 2 tablespoons at a time, beating until stiff peaks form and sugar dissolves.
