Lemon-Lime Butter Wafers

  • 1 tsp. pure vanilla extract
  • 10 oz. (2-¼ cups) unbleached all-purpose flour
  • ½ tsp. table salt
  • 1 Tbs. fresh lemon juice
  • 1 Tbs. finely grated lime zest (from about 1 large lime)
  • ½ lb. (1 cup) unsalted butter, softened
  • 1-¼ cups granulated sugar
  • + 2 more ingredients
    • 1 Tbs. fresh lime juice
    • 1 Tbs. finely grated lemon zest (from about 1 large lemon)

Sift the flour and salt into a medium bowl. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and both zests on medium low until well blended, about 2 minutes.
