Lemon Mascarpone Pudding

Ingredients

  • 1 (8-ounce) container mascarpone cheese
  • 6 oz cream cheese, softened
  • ¼ c sugar
  • ¼ c sour cream
  • 1 T grated lemon rind
  • 1 t vanilla extract
  • ¼ t lemon extract

    • 3 eggs
    • 1⁄3 cup fresh lemon juice
    • ¾ c sugar
    • 4 T unsalted butter, softened and cut
    • into small pieces
    • 1 T grated lemon rind
    • 24 vanilla wafer cookies
