Ingredients

  • ½ teaspoon salt
  • GINGERSNAP DOUGH
  • 3 large egg whites
  • 1 cup packed brown sugar
  • 1 large egg
  • LEMON MERINGUE
  • ¾ cup granulated sugar

    • 3 ½ cups flour
    • ½ teaspoon each ground cloves, nutmeg, and freshly ground black pepper
    • 2 tablespoons fresh lemon juice
    • Powdered sugar for dusting
    • 1 teaspoon cinnamon
    • ½ cup unsulphured molasses
    • 1 cup butter, at room temperature
    • 1 teaspoon baking soda
    • Zest of 1 lemon
    • 2 teaspoons ground ginger
