Lemon Meringue Pie with Graham-Cracker Crust
Ingredients
- ½ cup granulated sugar
- ¼ teaspoon kosher salt
- 5 large egg whites, at room temperature
- For the meringue::
- 2 tablespoons finely grated lemon zest (from 3 to 4 lemons)
- 2 tablespoons (¼ stick) unsalted butter, cut into pieces
- 1 ¼ cup water

- 4 large egg yolks
- 1 ½ cups granulated sugar
- 1/3 cup cornstarch
- For the lemon filling::
- ¼ teaspoon kosher salt
- 3 tablespoons granulated sugar
- 6 tablespoons (¾ stick) unsalted butter, melted and cooled
- 1 ½ cups crushed graham crackers (about 8 whole crackers)
- For the graham-cracker crust::
