Lemon Meringue Pie with Pecan Crust

Ingredients

  • 1/3 cup cornstarch
  • 1 cup all purpose flour
  • 2 tablespoons grated lemon peel
  • 3 tablespoons water
  • 3 tablespoons vegetable shortening
  • 2/3 cup pecans
  • 1/3 cup cake flour
  • + 8 more ingredients
    • 3 tablespoons golden brown sugar
    • ½ teaspoon salt
    • 2 1/12 cups sugar
    • ½ teaspoon cream of tartar
    • 1 ½ cups water
    • 5 large eggs
    • ½ cup fresh lemon juice
    • 5 tablespoons unsalted butter

Mix first 5 ingredients in large bowl; add butter and shortening. Using electric mixer, beat at low speed until mixture resembles coarse meal. Add 2 tablespoons ice water.
