Lemon-Scented Coconut Macaroon Bars

Ingredients

  • 5 tablespoons butter, softened
  • 1 cup flaked sweetened coconut
  • 1 ½ cups all-purpose flour
  • 4 large egg whites (at room temperature)
  • ¼ teaspoon salt
  • ½ teaspoon cream of tartar
  • 1/8 teaspoon almond extract
  • + 7 more ingredients
    • 1 tablespoon fresh lemon juice
    • Cooking spray
    • 2 ½ teaspoons grated lemon rind
    • 1 cup sugar

Preheat oven to 350°. To prepare crust, place first 4 ingredients in a large bowl; beat with a mixer at medium speed until well blended.
