Lemony Walnut-Crusted Fish Fillets

- 1 tablespoon lemon juice
- 2 small slices whole wheat bread
- ¼ cup loosely packed fresh parsley leaves
- ¼ cup finely chopped walnuts
- 2 tablespoons I Can't Believe It's Not Butter! Cooking & Baking sticks
- 1 teaspoon grated lemon peel
- 1/8 teaspoon salt
