Lemony Walnut-Crusted Fish Fillets

- 1 pound cod or halibut fillets, about 1 inch thick
- 1/8 teaspoon salt
- 1 teaspoon grated lemon peel

- ¼ cup loosely packed fresh parsley leaves
- 2 small slices whole wheat bread
